I am creating a workflow that will create a call when something happens for the next business day. How do I set this up so that the call record is only created Monday through Friday and not on Saturday/Sunday?

You can create an integer field which will be automatically calculated by a SugarLogic dayofweek($date_field).
This function returns 0 for Sunday and 6 for Saturday.
Then you can create a workflow which evaluates this field and add a specific number of days to new upcoming Call.
