Lead assigned date and lead expiry date

When a user claims a lead from the lead pool I am looking to add a lead assigned date and then calculate 21 days from there to add an expiry date to the lead.  Once the expiry date is reached, I am going to create a workflow that reassigns the lead to "pooluser" (our user that all leads are in if unclaimed)....Whats best practice for creating the date lead assigned, expiry date, and the work flow?
