How do I build a workflow to only run between 8am and 6pm ET from Monday to Friday?

I have an automatic case alert workflow created but I only want it to be sent between 8am and 6pm ET from Monday through Friday.  I can set it so that all new cases created after 8am AND before 6pm ET set off the alert but there is no option to select Monday through Friday.  It only allows me to select a specific date.  Can someone help here?
