If a Lead was previously converted to an Opportunity, is it possible to retrieve from anywhere which options were selected to be included in the conversion.

Not that I am aware of. One option is to look at the Account's Date Created field to see if that date and time matches the Date Created of the Opportunity. If they match, then the Account would have been created at the same time as the opportunity and most likely was a result of using the "Create a New Account" option.
