scheduling a callback according to the custom datetime field

I was wondering if this functionality is possible through the use of studio or workflow manager.

So this is my setup. I have a custom field named "schedule callback" of data type checkbox. I also have a custom field named "Call back" of data type datetime. Custom field "Call back" is only visible if the "schedule callback" field is checked. I got this part covered already by making it a dependent field.

What i want to know is how do i create a new call record and set its start datetime the same with the values in the "call back" field? Or atleast what is the closest work around for this?

I tried using workflow manager however it does not allow me to set its start date according to the custom field "call back".
