How do we record our email communications in CE?

I've used a number of different CRM platforms in the past but this is my first time to experience SugarCRM. We're using the CE edition and I'm trying to work out how each of our sales team members are going to record our communications with clients. There doesn't seem to be any information on this online. I understand that the CE edition does not support email archiving, but what other options are available to us? Do emails need to be copy/pasted in manually?

SMTP and IMAP configuration options seem to be only for "group" email addresses - I'm still trying to work out how these would be used.

I recognise this is a very fundamental question but hope someone can help!
