How do I track emails generated by workflows?

We have a workflow that is triggered when an email is received regarding a case

the subject will be something like RE: [CASE:CS016615] External Test 

The email attaches to the Case properly and the workflow is triggered

It Should send 2 emails one to the Contact the Case is associated with and one to the assigned user of the case 

This works most of the time but occassional the assigned user does not receive an email and possibly the customer doesnt either

I nead a way of logging when an email has been sent via the workflow to try and track down whether it is a Sugar or Exchange problem

I thought that the outbound emails would be recorded in the emails table but they arn't :(

Are outbound emails generated from workflows recorded anywhere in Sugar?
