How can I pass additional field values when quick creating a case from email?

Hi Experts,

When I use email to create cases via Quick Create option, I am getting the email subject as name and email content as description.

Is it possible to assign the 'email date sent' value to a user-defined field in Cases module?
Please let me know how to achieve this.
